If you don't want to enter the variables individually you can use
findname from SSC:
sysuse auto, replace
findname, type(numeric)
local varlist `r(varlist)'
foreach V in `varlist' {
local meanlist `meanlist' m`V'=`V'
local sdlist `sdlist' sd`V'=`V'
}
collapse (mean) `meanlist' (sd) `sdlist'
