A graph consists of many elements and in Stata you can change the color
of each of these elements separately, which means you will have to
specify lots of of options. As you haven't said what element of the
graph you want to change it is very hard to give you specific advise.
In general you need to use the help files to find out what options you
have to specify and how to do that: So if you use a -twoway scatter-
plot, type -help twoway scatter-, look at the options available, and
you will see that you can for example specify the color of the marker
using the -mcolor()- option.

Alternatively you can change the -scheme- (edit --> preferences -->
graph preferences). This will change the color of lots of elements of
the graph in one go. 

There are number of schemes that come standard with Stata, but I like
Svend Juul's lean scheme. To install type -findit scheme_lean- and
follow the instructions. This scheme is also discussed in Svend Juul
(2003) Lean mainstream schemes for Stata 8 graphics, The Stata Journal,
3(3): 295-301.
