-graph- as such neither supports nor prohibits italics.
Fonts are in essence between you and your system,
depending on what has been installed previously,
including Stata's own fonts.
So, you can select a font for the text in your Stata graph,
and it can be an italic font, but everything will be in that
font. Thus just using italic for one component is not
possible. So the short answer is No.
That's my understanding of Stata on this point.
On a different level, we could all throw our prejudices
on the matter into the ring. My own line as a scientist,
including roles as reader, author, reviewer/referee
and member of editorial boards, is that in science (broad
sense) graph designers should stick to one font throughout.
But then I cleave to the minimalist-Tufte-Shaker-Bauhaus school
of graph design.
More importantly, so too, broadly speaking, do StataCorp.
But, notoriously, tastes differ.

Stata 8.2 Windows XP Pro SP2
I want to italicize a caption in my graph. With so much italics within
Stata
[G] manual, one would have thought I could find the answer pronto - but
I could not. This was as thing stand:
caption(SomeCaptionHere, size(small) color(green) ring(0) position(5))
then I tried:
caption(SomeCaptionHere, size(small) color(green) style(italics) ring(0)
position(5))
but no luck (as was searching in [G] and -search
caption|font|style|italics).
Searching Stata list, I found an exchange about one and a half years ago
for a query about mixing non-italicized and italicized words within a graph
label. The implication seemed to be that though mixing them was not
possible, in isolation italicizing was possible. Link here:
