This book has 3 chapters on count data:

There's also an older book:

If you want a more theoretical book, I like Econometric Analysis of
Count Data by Winkelmann or Regression Analysis of Count Data by
Cameron and Trivedi. There's going to be a new edition of the latter
coming out in April.
