I updated my Stata just now to 12.1 for Mac, typed in exactly what you have. Closed Stata. Reopenend it and used the menu to begin log and the default file type is still smcl.
It actually is in my profile, but I commented it out because the profile will save my logfile to a different folder that I want. I want the logfile to be in my working folder and of course that folder changes over time. I know I can work around it, but I don't want to have to consciously ensure that it is saved as a text file rather than smcl. Something like that perhaps should be in Preferences.
