Re-subscribe normally (i.e., not in digest format), and then use a
filter to filter all mail from Statalist into a dedicated mailbox
(with OS X Mail, use Mailbox -> New Mailbox... and then go to
Preferences -> Rules to create the filter). Then, set the view of
that mailbox to threaded (again, with Mail, under View -> Organize by
Thread). This will solve both of your problems, and Mail's threaded
view works quite nicely (except when people don't respond to messages
properly).
