Hallo Dave,
1. TeX is installed as MacTeX (essentially TeX Live) http://tug.org/mactex2
.
2. In addition, the command epspdf is available, see http://tug.ctan.org/pkg/epspdf
(This is not epstopdf!!!)
The only thing that is Mac-specific is the Editor I use for LaTeX:
TeXShop. It has a convenient functionality to run latex, dvipdf,
ps2pdf13 and epspdf on the LaTeX-file that annotates the eps-graphic
("engines") - other OSs and editors have other ways to do that.
Nothing in the procedure is Mac-specific. Instead of MacTeX/TeXLive,
it could also be a MikTeX/Winedt install on a PC. The only thing
that is OS and user specific is a way to run the necessary sequence
of commands on the .tex file.
See also the LaTeX & Co section on my homepage http://www.wiwi.uni-rostock.de/~wsf8545/
Does that help you already? What other info is necessary?

I would be very interested in a detailed FAQ on your system for
doing this on a Mac. Maybe it could grow into a graphics hacks file
for others OSs like the text editor files has grown. I use a Mac.

Has anyone developed a way or method to incorporate LaTeX formatted
text into a Stata graph? It would be great if the Stata graph
editor
had the capability to generate LaTeX formatted annotations. For Mac
users, I have in mind something along the lines of the program
LaTeXiT
that allows one to add snippets of LaTeX text to Powerpoint or
Keynote
presentations.
