It sounds as if you want to separate things: Quintile shares vs. % of pop
within a given income bracket or range.

I am not sure how the first and the second part of your question are
related. If you created a variable using -xtile-, representing
quitiles, than your first quitile will contain 20%, the second 20%,
etc. There is no need to determine these proportions, you have created
them to be 20%. (The precise numbers may differ very slightly when the
number of observations isn't exactly divisable by 5, but that should
not worry you.)
Say you have a different income variable called income, than you can
type -tab income-.
