You have already given the answer with respect to -summarize-. In case
of -correlate- you can make a matrix containing the corrlation matrix
and display it using the -matlist- command. Creating the correlation
matrix is explained in http://www.stata.com/support/faqs/stat/rho.html.

matrix R = corr(R)
