Dear Ninii,
the number of quadrature point refers to mathematical calculationof approximating an integral. the more points, the more precise, but the more compuational time is necessary. For an ordered probit estimation 30 points would lead to a quite robust estimation, for xtprobit I do not know. The option quad (..) specifies the quadrature points.
This question is actually answered in the handbook on xt-commands...
