In addition to Lee's very detailed and 
helpful suggestions, I'll plug two 
Stata solutions for _ordered_ categorical data
(the implication seems to be that Daniel's 
data are something like level of education). 

-distplot- is for distribution plots. In 
fact, two-thirds of the help is devoted 
to details on using that plot for graded 
data. 

-slideplot- is also dedicated to plotting 
similar data.
